How do I determine the size of a gravity deck for a spacecraft? How far does the gravity deck's artificial gravity field extend?

The gravity is caused by motion not by a generated field.

You can choose the Diameter of your Grav Deck.
There are three categories for determining weight and costs (diameter each):
Small: < 100m
Medium: 100 - 250m
Heavy: > 250m (only allowed for Space Stations)
As Vagabond pointed out they don't produce gravity via a strange gravity field but by plain and simple centrifugal force.
So only things and persons on the Grav Deck itself experience gravity. The rest of the ship doesn't.
If the ship accelerates or deccelerates (or performs any maneuver at all) the Grav Deck has to be locked in place for that time. _________________ Reality is where the Pizza-man comes from!'Gucken, petzen, verpissen!' Most Warship and Jumpship grav decks are 80 to 120 meters if you look at their specs (for canon units I mean). Sure, you have to think a bit before choosing a diameter
A 270 m long ship would look rather funny with a 250 m grav deck
The smallest grav decks in official designs have 40 m diameter (Merchant jumpship) and the biggest have 210m (Avalon Cruiser).
A lot of the bigger ships have two or three grav decks and the Leviathan even 8.

So decide how much gravity you want the crew to experience, multiply the gravety by 10, and then multiply it by 22.4 to determine the radius needed.
0.1g of artificial gravity = 22.4m radius gravdeck
0.4g of artificial gravity = 89.6m radius gravdeck
0.5g of artificial gravity = 112m radius gravdeck
1.0g of artificial gravity = 224m radius gravdeck
so this is your choices:
small gravdeck (up to 99m) - weight 50 tons; max Gs generated 0.44g)
medium gravdeck (up to 250m) - weight 100 tons; max Gs generated 1.11g)
large gravdeck (up to 1500m) - weight 500 tons; max Gs generated 6.69g)
