In the Inner Sphere, the only noble houses that get lots of real character depth are Kurita (ala Theodore and Takashi) and, to a much lesser extent, Marik and Steiner. Characterizations of Davion and Liao both tend to be pretty cookie-cutter in the novels. I think the Davion characters are so bad simply because Stackpole did most of the writing for their characters.

Stackpole has his strengths as a writer, but depth of character is definitely not among them. I think Victor is about as far as he got in terms of character depth. (Let us endlessly repeat our mantra: "Victor is a dummy, but he learns well.") His characters tend to be larger than life exaggerations of characteristics.
I'm also not really sure Takashi and Teddy have any more character depth. Coleman definitely does the most in-depth characters in BT fiction (at least among the current writers).
I might note that the latest MWDA novel, Fortress of Lies, does pretty good character depth and is IMHO easily the best of the MWDA novels to date.
